Helen's Recipes

PASTIZZIO (home made)
1 kg ground beef
2 big onions chopped
1 can of peeled tomatoes
4 Table spoons olive oil
2 packs of pasta (macaroni -thick round long pasta)
1+1/2 lit. milk
2 eggs
6 Table spoons flour
100 gr Lurpak butter unsalted
500 gr of gouda cheese grounded
500 gr, Regato cheese grounded
salt and pepper

1.You put 4 Tspoons of olive oil, chopped onions and the ground beef in a frying pan to be sautéed.Stir from time to time. When done you add the peeled tomatoes (chopped) and three cups of water and let it boil in low temperature until it absorbs the liquids.
2.Boil the pasta in salted water and drain.
3.Put the milk with one teaspoon salt in a pan and in low temperature, let it get lukewarm. Then add the flour and stir continuously with a batter so that the flour and the milk become a creamy substance. Add the butter and continue stirring until it thickens up. Take out of the fire. Batter the two eggs and add them to the cream slowly while stirring
4.Take a square or round baking pan and put in the macaroni.. Add the mince meat sauce and the cheeses and stir until the cheese and sauce are mixed with the macaroni. Cover it with the cream sauce and bake in the oven in 180/200C
until the top gets brownish. Then it is ready. Do enjoy it with your family and friends and remember your holidays in Crete.

MOUSSAKA (home made)
1 kg ground beef
2 big onions chopped
4 Tablespoons of olive oil
1 can of peeled tomatoes
salt and pepper
4 big potatoes
6 big eggplants
1 Cup olive oil for frying
1+1/2 lt milk
6 Tablespoons flour
100 gr Lurpak or other butter
2 eggs
Salt and pepper

1.Put the 4 Tspoons of olive oil in a big frying pan add the chopped onions, and ground beef and let it be sauteed, Stir from time to time. Then add the peeled tomatoes with their sauce and three cups of water and let it boil in low temperature until it absorbs the liquids.
2.Cut the eggplants in ½ cm slices ,add a lot of salt and let them stay for half an hour. Then wash off the salt. Cut in the same way the potatoes after of course peeling them., and salt them. Put a frying pan on the oven with the one cup of olive oil and when it is hot start frying the potatoes and then the eggplants. When finished put them aside.
3.Put the milk with one teaspoon salt in a pan and in low temperature, let it get lukewarm. Then add the flour and stir continuously with a batter so that the flour and the milk become a creamy substance. Add the butter and continue stirring until it thickens up. Take out of the fire. Batter the two eggs and add them to the cream slowly while stirring
4.Take a baking pan and start making layers, first a layer of potatoes, then some of the minced meat over it, cover with a layer of eggplants, again minced meat sauce again eggplants until the eggplants and minced meat are finished.
cover with the cream and put in the oven and bake in 180-200 C until the top of the cream is brownish. It is ready now to be enjoyed by you and your family and friends. p.s. you only make one layer of potatoes and it is always the bottom layer.

Greek home made Halva
1 cup of olive oil
2 cups of wheat flour
3 cups of sugar
4 cups of water
2 cinnamon sticks
lemon peel
1 cup walnuts (cut in small pieces)
1 cup white raisins

1. Put the water, sugar, cinnamon sticks and lemon peel in a pan and onto the fire. Stir until the sugar melts and let it boil until you see big bubbles forming. Take out of the fire..
2. Put the olive oil in a pan and heat. Add wheat flour and stir continuously until wheat flour takes a honey colour. Add walnuts and raisins and take it out of the fire.
Stir in the syrup slowly while they are both hot but be careful not to burn your hands while stirring. Put back on the fire in low temperature for about one minute. Take away from the fire, cover with a clean towel and put the lid on top of the pot . Let it stay for about five or ten minutes. The it is ready to serve. You can sprinkle it with some ground cinnamon when served. Enjoy your dessert from Greece.
